"headless" guest with multiple monitors (details inside)

Hey guys,

What I'm looking to do is create a guest and then RDP/VNC into it and have multiple monitor support for the RDP/VNC.

I'm running on an Arch Linux host and I'd like to create an Arch Linux Guest.  I have 3 monitors, which the host system uses, but workstation will only expand to 2 of the monitors.

What I'd like to do is be able to run the VM in the background (meaning, not being displayed on any of the monitors) and then use an RDP/VNC client to connect to said vm and have it display 3 monitors.

I know RDP/VNC supports this functionality, I'm unsure about whether or not I can get vmware to report 3 monitors to the guest, even when it's not displaying.

Any help/ideas/advice?

Utlimately, if I could get vmware workstation itself to display across all 3 monitors I'd be happy with that, although for unrelated reasons I'd still like to enable the RDP/VNC route.
